  • 100g fresh longan or lychees, or strawberries, mangos, or canned peach

  • 15g Chia seeds (optional)

  • 40g sliced almonds

How to Make Khuc Bach Sweet Gruel

  1. Prepare the Panna Cotta (should be done at least 4 hours before serving)

  • Soak the gelatin in 150ml of milk for 10 minutes until soft.

  • In a pot, heat a small amount of water and bring it to a boil. Reduce the heat and place the bowl with the gelatin in the pot. Stir continuously until the gelatin is completely dissolved in the milk and no residue remains in the bowl.

  • Pour the gelatin mixture into the 150ml of whipping cream, stirring to make a homogeneous mixture. Divide the mixture into two parts and place it into two different molds.

  • For the pink jelly, add 10ml of Thanh Mai syrup into one of the molds and stir until the mixture turns pink.

  • Place the two jelly molds in the refrigerator for at least 3-4 hours until frozen. The longer it stays in the refrigerator, the firmer and more flexible the jelly will become. Do not keep the jelly in the refrigerator for more than 4 days.

  • Generally, 10g of gelatin is enough to coagulate 300ml of liquid. However, using 12g as the recipe calls for will result in a more firm and pliable jelly. If you prefer a softer jelly, reduce the amount of gelatin to 10g. If you want a firmer jelly, you can increase it. But if you use too much gelatin, especially in powder form, the jelly may have an unpleasant odor.

  1. Prepare the other ingredients:

  • Rinse the pandan leaves and tie them into a knot. Add 1 liter of water and the pandan leaves to a pot and bring to a boil. Stir gently to let the sugar dissolve. Remove from heat and let cool, then place in the refrigerator until ready to use. If you want a white sugar syrup, add the pandan leaves after the sugar has dissolved.

  • Roast the almonds in a pan until medium yellow and fragrant. Let cool.

  • Peel the lychees fruit. You can also use longan, strawberries, mulberries, peaches, plums, mangoes, or jackfruit. If using longan or lychees from a box, keep the water used to soak the fruit and add it to the sugar syrup for a better flavor.

  • Remove the panna cotta from the mold by using a knife to loosen the edges or by dipping the mold in hot water for 10 seconds. Cut into pieces to serve. Dip the knife into water before cutting for easier and sharper cuts.

  1. Serve:

  • Place the lychees, panna cotta, and sugar syrup in a bowl. Sprinkle with almonds and chia seeds. Serve cold for the best taste.
